The most simple way should be editing CharBaseInfo.dbc, simply delete all race/class combinations of unwaned races and that should be all. I will make all classes for those races unplayable = race will get deleted. If it will also disappear from character creation screen I can't say for sure, probably not, so you might also need to edit character creation lua/xml files.

MyDBCEditor will not open every file you throw at it - however you can convert .DBC to .CSV and back using DBCUtil and while using CSVEdit to make changes.

CSVEdit and DBCUtil are available here.

That DBC can be edited by Taliis. I don't recommend using Taliis for editing DBCs in general, but for this particular one there are not many other options.

Why don't you just start by removing stuff from ChrRaces.dbc, then see where it is still present (gluexml/*) or what is crashing (maybe the server due to still having references itself), then continue your search until everything works? That's a straight forward approach, and in the end you will even be able to write a guide for others.

I do not try to delete rows from ChrRaces.dbc - I'll try. But with gluexml I worked . Removed buttom bla_bla (ID-bla bla) and the client does not run. Mb deleting rows from .dbc helps

The link isn't dead, use the Mediafire mirror provided on the post, here:
Link!

Don't use Taliis over this method. While I don't like spoonfeeding, this is extremely basic and if I can attempt to answer all your questions, the sooner the better.

Here's an extremely quick guide on deleting entries inside a DBC. (Using DBCUtil/CSVEditor)

Drag/Drop DBC onto DBCUtil.exe - This creates a CSV file.

Open the newly created CSV File with CSVEdit

(If it asks what to open CSV with, direct it to CSVEdit)

Find the race you want to delete, right click it's row and press "Delete Records"

SAVE the file in CSVEdit, then drag/drop the CSV onto DBCUtil again, this will overwrite the old DBC with the new one - done!

Resources to educate yourself further on this:
ChrRaces.dbc
ChrRaces Expanded

With those two links and the tools provided, you CAN do this yourself easily. ^^
This was written assuming you have no experience at all, apologies if it comes across patronising.

---Also, you can't edit GlueXML without disabling the GlueXML Check in WoW.exe, check out this post to do that.
