There is a model view for WoD already. You could use that.

I don't think they deleted the old outfits. They don't clean their mess of unused models, trust me. Even WoW alpha models are still in Warlords of Draenor.The line in the DBC, however, have probably changed. But if you explore old DBC and take note of the outfit display IDs you should be able to change your line in your modern game and make an old Varian/Stoutmantle or whatever. Refer to NPC creation tutorials to understand NPC DBCs if you are not sure where you should play with values.
