i have this problem too. I think the problem is because we scale the model "ingame" so WoW recalculates wrong the new mount size. Maybe u could do an specific set of some mounts for them ;)

I don't really know what defines the mount size. Maybe it is documented, maybe it is not. Try setting the bounding box in CreatureModelData though.
