Even if it sounds dumb as hell, could you do it  ?
-
make dagger with DisplayID of shield and give it stats as shield
make shild with display of shield and stat as shield
equip dagger & shield ?

Wouldn't the model of the shield be facing the wrong way? Can you make a weapon give blocking value and be categorized as a shield?
Was kind of looking for something that made shields one handed so you could dual wield them

Shield would be facing your character, it would be flipped. There's absolutely nothing you can do about it. You may notice that all fist weapons which come in pairs have left and right handed version. Thats no coincidence, it just must be done so in WotLK.

Mostly correct. You could use the SpellVisualKitModelAttack and rotate the model to achieve basically the same effect.
-
or you can create new model where you flip direction
there are always planty ways how to do it
-
Well, ofc you can create a new flipped model. I meant without creating actually model made for such use. And that hack with SpellVisual... nah, I honestly think creating a new flipped model would take lesser effort than creating a new spell, spell visual, applying it on item...

It'd take me literally a minute once you tell me what model it is. /shrug
