Can I play my patches also if the server doesnt have them?

You can't if the map is not included in the server you're playing on, otherwise: mighty crash!
You CAN use custom patches where servers do not support them, but you'll get obvious bugs such as misplaced objects and npcs, and a ban if you're on retail :D
