You don't convert MOP .m2 to use them in Cata IIRC. The format is the same between them. As Anthony said above all you should need (once you have the files from MOP - IE: .m2, .skins, and .blps) is a patched wow.exe to load custom MPQs. Then you just make sure the filepath is the same as the original files and your new ones will override the cata model.
I did that exactly, ripped the blp both .m2's and both .skins from wowmodelviewer..
added them in a patch and overwrote the treepath and it just shows up all green in game. like the model is there and correct but its pure green.
and i do have a patched wow i am using another custom patch for brown orc skin.
